Sinbad's Mini Fruit Tart Recipe
Mini Fruit Tarts are easy to make, and with a little care, can be even more stunning than a large fruit tart. The filling could not be any easier to make and this is a no-bake recipe...so it's great if you want to get your kids involved.

For the mini shells just use pre-made mini-shells. These are available at most specialty stores.

For the Filling

  • 3 oz. softened cream cheese
  • 1/4 cup sour cream
  • 1 tablespoon orange juice
  • 1/2 teaspoon vanilla extract

For the Topping

  • 15 mini tart shells
  • An assortment of sliced seasonal fruit such as blueberries, blackberries, figs, strawberries, peaches and kiwi
  • 1/2 cup apricot preserves
  • 1 tablespoons water

Mix all of the filling ingredients together in a medium bowl until combined.

Carefully spoon one teaspoon of the filling into each mini tart shell. Artfully top each mini tart shell with sliced fruit.

Mix together the apricot preserves and water and microwave until bubbly, maybe 60 seconds. Using a pastry brush, apply this apricot glaze to the surface of the fruit.
